Tortalinis Continued :-)

Make a basic pasta dough.  Something like:
1 egg
1/2 tsp salt
2 TB of water
1 C. flour
Roll out your dough VERY thinly, and cut circles.
I found that using a small canning lid worked perfectly. 
Put about a tsp. of your ricotta cheese filling to one side of each circle. 
Fold the dough over like a quesadilla, and seal the edges. 
REALLY. SEAL. THOSE. EDGES. GOOD.
Then you bring the corners of your half-moon shape  around somehow and pinch them together. 
ahhh....somthing like that.

Definitly not the most wonderful looking little things, but it won't even be noticeable when they're covered in tomato sauce ;-)

To cook, drop them in salted boiling water. They float when they're done!
